The lettuce is bolting and that calls for Lettuce Pie. The problem, there are not many recipes for Lettuce Pie. One was from the the 1700’s and the other had anchovies, a deal breaker for me. The other problem is that lettuce that is bolting is old lettuce and old lettuce is bitter. I added some white raisins, problem solved. I’ll be tweaking the recipe as I work my way through pile of lettuce. Will post when perfected.
