Tortellini with Parmesan Cream Sauce

Funny motivational speaker Vinny Verelli cooks up a heart stoping tortellini recipe with heavy cream, parmesan cheese and prosciutto ham. But it’s okay, there’s broccoli in the dish also. But to be on the safe side, you may want to double up on your Zocor.

Cooking With Vinny, Recipe Notes:
I use one 9oz pack of tortellini, Chicken and Prosciutto
2 Cups Heavy Cream (Whipping Cream)
1 Cup Parmesan Cheese
8-10 oz Broccoli florets
3.5 oz Prosciutto or other smoky ham
1/4 cup toasted pine nuts
Fresh group pepper
salt if needed.

Use a fresh tortellini. There are some nice varieties available in most grocery chains. If you’re in New York or major metro area you can find an Italian grocer who makes fresh tortellini. This is a rich cheese cream sauce we’re making so don’t buy any 3 or 4 cheese (cause 3 cheeses wasn’t enough) tortellini, it will just get lost in the sauce. I like to use a Chicken/Prosciutto.

We’re using 2 cups heavy cream, 1+ cup Parmesan cheese. But you can use Gorgonzola, Fontina, or anything cheese you like.

In advance cook the tortellini al dante and par boil the broccoli for one minute after it returns to boil. Strain and place in an ice bath to stop the cooking and seal in the color. Pour the cream in a large heavy sauce pan. Add the cheese and ham and bring to a boil to reduce. Add some freshly ground pepper to taste. No salt is needed at this time as the ham is very salty.  Stir occasionally to see how thick the sauce is getting. You don’t want the sauce to burn. Taste the sauce and adjust the seasoning. If you want you can add salt at this time, but not too much.  Salt is something individuals can add to their own liking when the dish is finished.

Add the broccoli and bring back to a boil and continue to reduce. When the mixture reaches the desired thickness, stir in the tortellini and continue to cook about one minute until the tortellini is heated through. Plate the entree and garnish with toasted pine nuts and a sprig of fresh basil.

Venison Chili

One of the best things about living in the North Georgia Mountains is people are always bringing you things.  Things they grow, things they shoot, things they … run over.  Here is a simple and tasty recipe for venison chili.

I was using ground Venison for this recipe, not the sausage shown earlier. The sausage has too much of it’s own flavor and would compete with the chili powder.

After watching the video I realized I never said how much beef stock or bouillon to use. Use 1/2 cup. This along with the 1/2 of red wine add a lot of flavor.

I drained the can of tomatoes, reserving the liquid, since I was using the stock and wine. The tomato juice would have watered down the chili. If after cooking the chili it seems to be getting too thick for your liking you can use the reserved tomato juice.
